The buckwheat in this delicious snack gives it a yummy crunch, best served straight from the fridge.
1 cup of buckwheat groats
1 cup of dried fruit (currants, cranberries, raisins etc)
1 cup of shredded coconut
Pinch of salt
¾ cup of coconut oil (melted)
3 tbsp. maple syrup
1 tsp of vanilla essence
Method
Mix all ingredients into a bowl and stir well with a wooden spoon.
Line a slice pan with baking paper and spread the mixture evenly and press down firmly
Set in the fridge until ready to slice and serve
