Overnight Coconut Buckwheat Porridge

This overnight coconut buckwheat porridge is a filling, healthy and vegan friendly porridge recipe made with coconut milk, buckwheat and chia seeds.

1 cup of buckwheat groats

¼ cup chia seeds

3 cups of unsweetened coconut milk (or any other nut milk you prefer)

1 cup water

2 teaspoons vanilla extract

¼ teaspoon cinnamon

Pinch of salt

Method

Mix buckwheat groats, chia seeds, coconut milk, water, vanilla extract and salt in a bowl. Cover it and let it sit overnight in the fridge

In the morning place it in a pot and cook, stirring occasionally and you reach the desired thickness, then top with delicious fresh fruit, coconut, seeds or nuts. Serve.
